ವಾಂಗಿಬಾತ್‌‌‌ (Vangibath)

ಬದನೆಕಾಯಿ ಎಂದರೆ ಬಹಳ ಜನಕ್ಕೆ ಇಷ್ಟವಾಗುವುದಿಲ್ಲ. ಆದರೆ ಬದನೆಕಾಯಿ ಬಳಸಿ ತಯಾರಿಸಲಾದ ವಾಂಗಿಬಾತ್‌‌‌ ಎಂದರೆ ಇಷ್ಟಪಟ್ಟು ತಿನ್ನುತ್ತಾರೆ. ವಾಂಗಿಬಾತ್ ಕರ್ನಾಟಕದ ಸಾಂಪ್ರದಾಯಿಕ ಅಡಿಗೆ. ಮದುವೆ ಹಾಗೂ ಇನ್ನಿತರ ಶುಭ ಸಮಾರಂಭಗಳಲ್ಲಿ ವಾಂಗಿಬಾತ್ ತಯಾರಿಸುತ್ತಾರೆ. ಸಾಮಗ್ರಿಗಳು ಅನ್ನ - 2 ಕಪ್‌ ಬದನೆಕಾಯಿ - 3 ಸಾಸಿವೆ - 1 tsp. ಕಡ್ಲೆಬೇಳೆ - 2 tbsp. ಉದ್ದಿನಬೇಳೆ - 2 tbsp. ಹುಣಿಸೆಹಣ್ಣು - ನಿಂಬೆಗಾತ್ರದ್ದು ಕರಿಬೇವಿನ ಸೊಪ್ಪು - 2 ಎಸಳು ಚೆಕ್ಕೆ - 3 ತುಂಡು ಏಲಕ್ಕಿ - 2 ಲವಂಗ - 1 tbsp. ಒಣಮೆಣಸಿನ ಕಾಯಿ - 6 ಅರಿಶಿನ - 1/2 tsp. ಮೆಂತ್ಯ - 1 tsp. ಧನಿಯಾ - 2 tbsp. ಕೊಬ್ಬರಿ - 1/2 ಕಪ್‌‌‌‌ ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ತಯಾರಿಸುವ ವಿಧಾನ ಹುಣಿಸೆಹಣ್ಣನ್ನು ನೀರಿನಲ್ಲಿ ನೆನೆಯಲು ಬಿಡಿ. ಪ್ಯಾನ್‌ ಬಿಸಿ ಮಾಡಿಕೊಂಡು ಕಡ್ಲಬೇಳೆ, ಉದ್ದಿನಬೇಳೆ, ಧನಿಯಾ, ಮೆಂತ್ಯ, ಚೆಕ್ಕೆ, ಏಲಕ್ಕಿ, ಲವಂಗ , ಒಣಮೆಣಸಿನ ಕಾಯಿ ಕೊನೆಯಲ್ಲಿ ಅರಿಶಿನ , ಕೊಬ್ಬರಿ ಸೇರಿಸಿ ಎಲ್ಲವನ್ನೂ ಹುರಿದುಕೊಂಡು ತಣ್ಣಗಾಗಲು ಬಿಡಿ. ಹುರಿದುಕೊಂಡ ಮಿಶ್ರಣವನ್ನು ಮಿಕ್ಸಿಯಲ್ಲಿ ಪುಡಿ ಮಾಡಿಕೊಳ್ಳಿ. ಬದನೆಕಾಯಿ ತೊಳೆದು ಉದ್ದವಾಗಿ ಹೆಚ್ಚಿಕೊಳ್ಳಿ. ಪ್ಯಾನ್‌‌‌‌ನಲ್ಲಿ ಎಣ್ಣೆ ಬಿಸಿ ಮಾಡಿಕೊಂಡು ಸಾಸಿವೆ, ಕಡ್ಲೆಬೇಳೆ, ಉದ್ದಿನಬೇಳೆ, ಅರಿಶಿನ, ಕರಿಬೇವಿನ ಸೊಪ್ಪು ಒಗ್ಗರಣೆ ಮಾಡಿ ಹೆಚ್ಚಿಕೊಂಡ ಬದನೆಕಾಯಿ ಸೇರಿಸಿ ಹುರಿಯಿರಿ. 10 ನಿಮಿಷದ ನಂತರ ಹುಣಿಸೆ ರಸ ಸೇರಿಸಿ 10 ನಿಮಿಷ ಬದನೆಕಾಯಿ ಬೇಯಲು ಬಿಡಿ. ನಂತರ ವಾಂಗಿಬಾತ್ ಪುಡಿ, ಉಪ್ಪು, ಅನ್ನ ಸೇರಿಸಿ ಮಿಶ್ರಣ ಅನ್ನಕ್ಕೆ ಹೊಂದಿಕೊಳ್ಳುವಂತೆ ಚೆನ್ನಾಗಿ ಮಿಕ್ಸ್ ಮಾಡಿ. ರಾಯತದೊಂದಿಗೆ ವಾಂಗಿಬಾತ್‌‌‌ಅನ್ನು ಸರ್ವ್‌ ಮಾಡಿ. Learn How To Make Vangi Bath Recipe, a Quick and Easy Karnataka Style Rice Recipe of Vangi Bhath in Marathi from Chef Smita Deo only on Ruchkar Mejwani. Make this easy Brinajl Rice Recipe at your home and share your experience with us in the comments section below. Ingredients:- 4 cups Rice, soaked for 15 minutes 3 tbsp. Oil 2 bay leaves 5 green cardamoms 1 tsp. Cumin seeds 2 onions, sliced 3 green chillies, slit ½ tsp. Turmeric powder Juice of 1 lemon 1 cup fresh green peas 1 big brinjal chopped into 1” cubes and soaked in water Salt to taste Vangi Bhaat Powder:- 10 dry Red chillies 3 tbsp. Coriander seeds 2 tbsp. Channa dal 1 tsp. Urad dal 2 tsp. Cumin seeds 1 tsp. Fenugreek 8 cloves 1” cinnamon Method:- 1. Roast the Vangi Bhaat Powder ingredients in a pan and grind to a fine powder after it cools down to room temperature. 2. Heat oil in a pan and add bay leaves, green cardamoms, cumin seeds, onions and saute until the onions turn pink. 3. Add green chillies, turmeric powder, Vangi Bhaat Powder, green peas, brinjal cubes and mix well. 4. Now add the soaked rice, 8 cups water, juice of a lemon and salt. 5. Mix thoroughly, cover with a lid and cook for 15-20 minutes on medium flame. Vangi Bhaat is ready to eat! HAPPY COOKING!!! Brinjal peaces - 2 cups
Vangi bath powder - 4 tsp
salt - to taste
Tamarind Juice
Turmeric powder - 1/4 tsp
Jagiri - small peace
Curry leaves
Mustard seeds - 1 tsp
Urad Dal - 1/2 tsp
Chana dal - 1/2 tsp
Oil - 4 tsp
