MUNCHIES: Meatball Shop

Daniel Holzman and Michael Chernow are two meatballs from Manhattan who love meatball subs. After working in kitchens for a while, they eventually got their shit together and opened The Meatball Shop on the Lower East Side and, later, another location in Williamsburg. In this episode of Munchies we do what we always do with our rising-star chefs: check out their food, go out and get them drunk, and then come back to their restaurant and make them cook for us. Fat Birds Are Easy Prey: Fulmar Hunting in the Faroe Islands

In the Faroe Islands in the North Atlantic, baby fulmar hunting is an annual August activity. The Faroese depend on seasonal hunting and fishing as a major part of their diet and lifestyle. At the end of each summer, baby fulmar birds fall from their nests in the fjords, where they bob in the water because they are too fat to fly. During the week or so before they manage to lose weight and take off, the Faroese go out in boats to scoop them from the sea and eat them. MUNCHIES went baby fulmar hunting with local Høgni Mohr, a writer by profession and a hunter in his spare time. He caught birds for his family and friends to last throughout the coming year. He showed us, via the fulmar feast, what it means to get a local meal in the Faroe Islands. As a lover of the sandwich and curious chef, London sandwich shop owner Max Halley is travelling the UK to find inspiration for a new sandwich to put on his menu. This episode of The Sandwich Show takes him to the Northumberland coast, where he forages for seaweed, cooks monkfish kebabs in a seaside shack, and learns how to smoke a kipper.

It doesn't take much to make a sandwich—all it really comes down to is putting stuff between two slices of bread. But as Max knows, in the right hands, the humble sarnie can become a flavour-packed meal in its own right.
