In fact, the Garlicky Beetroot Soup, despite not using potatoes or cream, is much creamier than you would expect, thanks to the addition of wheat flour. Healthful garlic is a surprise addition to this soup, but blends beautifully with dainty beetroot, which is another interesting reservoir of nutrients. Beetroot helps improves your looks, with better complexion and hair. Betacyanin, the antioxidant in beetroot helps to reduce the cholesterol levels and protect the heart too. Preparation Time: 5 minutes. Cooking Time: 19 minutes. Serves 4. ½ tsp garlic (lehsun) paste 2 medium sized beetroot (unpeeled) 1 tsp low-fat butter 1 tbsp whole wheat flour (gehun ka atta) ¾ cup low-fat milk, 99.7% fat-free Salt and freshly ground black pepper (kalimirch) to taste 1. Combine the beetroot with enough water in a pressure cooker and pressure cook for 4 whistles. 2. Allow the steam to escape before opening the lid. 3. Drain out the excess water and keep aside to cool slightly. 4. Peel the beetroot and roughly chop them. 5. Combine the chopped beetroot with 1 cup of water in a mixer and blend into a smooth mixture. Keep aside. 6. Heat the butter in a deep non-stick pan, add the whole wheat flour and cook on a medium flame for 1 minute, while stirring continuously. 7. Add the milk, mix well using a whisk and cook on a medium flame for 1 minute or till no lumps remain, while stirring continuously. 8. Add the beetroot mixture, garlic paste, salt, pepper and 1 cup of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Serve immediately. It is a good starter or appetizer. It is very light on stomach and a perfect recipe for cold wintery days. It is similar to rasam but differs in consistency. It has consistency like that of soup. A very rich in taste, authentic Maharashtrian recipe. Here is tomato saar. Ingredients: • 4 medium size Tomatoes • 1 tbsp Beet root pieces • 1/2 katori Water • 1/4” peeled, finely chopped Ginger • 1 tsp corn flour • 1 tsp Ghee • 1/4 tsp Cumin seeds • A pinch of Asafoetida • Cumin powder • A pinch of Red chilli powder • 1 Bay leaf • A bit of Jaggery • Salt to taste Method: • In a pot take tomatoes. Add beet root, water. • Put the pot in pressure cooker and cook on medium heat until 3 whistles. • Peel the cooked tomatoes. Transfer the boiled, peeled tomatoes into blender pot. • Add a few pieces of boiled beet and a little water in which beet was cooked to blender pot. • Add peeled, chopped ginger to blender pot. • Take corn flour in a bowl. Add boiled beet water to it and make paste. • No lumps of corn flour should be formed. • Add corn flour paste to blender pot, close the lid and blend it nicely. • The tomato, beet ginger paste is ready. • Heat up 1 tsp ghee in a pan. Add cumin seeds, asafoetida. Mix it once. • Lower the heat and sieve the tomato puree through a sieve into tadka. • This will remove the pieces of ginger or beet if any and tomato seed. Add a little water. • Add cumin powder, red chilli powder, bay leaf and jaggery. Add salt to taste. • Cook the saar on medium heat for about 4-5 minutes. • Tomato saar is already. • You can add bread croutons to saar if you want.
